Baked Lemon Garlic Haddock
Ingredients:
- 4 haddock fillets (6-8 ounces each)
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 1 lemon (zested and juiced)
- 1/4 cup breadcrumbs (panko works best for a crunchier texture)
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon paprika
- Salt and black pepper to taste
Instructions:
Preheat the oven: Set your oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper.Prepare the fish: Pat the haddock fillets dry with paper towels and season both sides with salt and pepper. Place them in the prepared baking dish.
Make the garlic-lemon mixture: In a small bowl, whisk together the olive oil, melted butter, minced garlic, lemon zest, and half of the lemon juice.
Coat the fillets: Drizzle the garlic-lemon mixture evenly over the haddock fillets.
Add breadcrumbs and spices: Sprinkle the breadcrumbs evenly over the fillets. Then add paprika on top for color and flavor.
Bake: Place the dish in the preheated oven and bake for 12-15 minutes, or until the haddock is opaque and flakes easily with a fork.
Garnish and serve: Sprinkle fresh parsley on top and drizzle with the remaining lemon juice. Serve immediately with your favorite sides, such as roasted vegetables or rice.
