Garlic Herb Baked Cod
Ingredients:
- 4 cod fillets (7–9 oz each)
- 3 tbsp olive oil
- 2 tbsp fresh lemon juice
- 4 garlic cloves, minced
- 1 tsp paprika
- 1 tsp dried oregano
- 1 tsp dried thyme or parsley
- Salt and pepper to taste
- Lemon wedges and fresh parsley for garnish (optional)
Instructions:
Preheat your oven to 400°F (200°C). Line a baking dish or sheet with parchment paper or lightly grease it with olive oil. In a small bowl, whisk together olive oil, lemon juice, garlic, paprika, oregano, thyme, salt, and pepper. Place the cod fillets in the prepared baking dish. Brush the seasoning mixture generously over the fillets, coating evenly. Bake in the preheated oven for 15–20 minutes or until the cod flakes easily with a fork and is opaque throughout. (Cooking time may vary slightly depending on the thickness of the fillets.) Transfer the baked cod to a serving plate. Garnish with fresh parsley and serve with lemon wedges for extra zest.
